A chafer is a buffet hot-holding unit: a frame, water pan, food pan(s), lid, and a fuel tray underneath. The fuel heats the water (bain-marie), and the steam keeps food hot and moist.

Can I cook food in a chafer?

No—chafers hold already fully cooked, piping hot food. Bring food to safe temperature on a stove/oven first, then transfer.

What temperature should food be held at?

Best practice is to keep hot food at or above ~63 °C (145 °F) during service. Always follow your local food-safety rules and use a probe thermometer to verify.

How much water goes in the pan?
